For the 6th Annual Carmel-by-the-Sea Culinary Week, Hog’s Breath Inn presents The Pig Roast on San Carlos — a firelit, family-style feast built around a whole heritage pig, slow-roasted over California coastal oak and presented tableside in our courtyard.

From passed bites and field salads to family-style sides, Central Coast wines, and a sweet finish with Hog’s Coffee for the table, this is Culinary Week the Hog’s Breath Inn way: warm, legendary, local, and unforgettable.

A Five-Act Family-Style Feast

The evening unfolds in five acts, beginning with passed bites from our oldest recipes and freshest fields, followed by vibrant salads, a whole roasted heritage pig, family-style sides, and a sweet finish.

At the center of the evening is the pig itself: dry-brined for thirty-six hours with Big Sur sea salt, brown sugar, fresh herbs, Gilroy garlic, and bay, then slow-roasted over California coastal oak. The whole pig is presented tableside before being carved and served family-style.

Act I: To Start

Grilled Castroville artichoke, Italian Fisherman Fritto Misto, Bigeye tuna tartare, and Otto’s Bread Company sourdough.

Act II: From the Fields

Carmel Mediterranean chopped salad, roasted beets with chèvre and grapefruit, and heirloom tomato and stone fruit panzanella.

Act III: The Pig

A whole heritage pig presented tableside, featuring crackling, shoulder, loin, belly, ribs, and butt with three signature sauces.

Act IV: The Sides

Salt-crusted potatoes, charred corn with cotija and lime, Dutch oven beans, roasted yams, and cabbage-jicama-apple slaw.

Act V: The Sweet Finish

Banana walnut butter bread pudding, warm pecan bourbon pie, Tahitian vanilla gelato, and a round of Hog’s Coffee on the house.

The Tableside Moment

 

At 7:15 p.m., the whole roasted pig is carried from the oak pit to the courtyard and presented before the long table. It is then carved and returned on platters for the table to share.

This is the moment that makes the evening more than dinner. It is fire, theater, wine, and fellowship — all in the unmistakable setting of Hog’s Breath Inn.

Add the Central Coast Wine Flight

The optional $48 wine flight was designed to follow the meal from first bite to final pour, with wines curated from the Hog’s Breath Inn wine list and anchored in Monterey and the Central Coast.

Featured selections include wines from Silvestri Vineyards, Dawn’s Dream, Lepe Cellars, and Galante Vineyards, paired across the five acts of the dinner.

For Culinary Week 2026, we are bringing that spirit to the long table with a one-seating, reservations-only feast built around local ingredients, Central Coast wines, and the timeless ritual of gathering around fire.
